V6 w/SP1 is the way to go. I recommend that you turn off Smart Scan and the TM FW. Currently using v6 SP1 on lots of SBS2K8 servers (w/Exch2K7). Also setup IMHS for cloud filtering. There are a lot of features and controls available in WFBSA.

I personally had issues with version 5 on 2003 boxes. Others that I
work with have been experiencing issues with v6 and exchange 2007 on
08 boxes.
